Preservation of fresh-cut Rocha Pear using Codium tomentosum extract

Rocha is a Portuguese pear cultivar with high economic importance in the Western Region. Degradative processes following its manipulation can quickly lead to product rejection, especially when sold as fresh-cut product. The efficacy of marine-based edible coating inhibit superficial browning development slices was investigated over storage period 15 days. aqueous extract Codium tomentosum, an green seaweed, incorporated (0.5 g 100 mL?1) for pear. This novel treatment effect on quality parameters pears compared commercial currently used by industry and control (dipping deionised water). After days at 4 °C, samples treated seaweed exhibited fewer colour changes lower rates than samples. Seaweed also observed yeast mould development, which may further contribute shelf-life extension.
